Interesting Facts
"Mono" Cabernet Sauvignon is a monosorted red dry wine from Cabernet Sauvignon grapes grown on the Taman Peninsula. Like other wines of the economy, Cabernet Sauvignon is produced in a limited quantity not exceeding 1000-1500 bottles. A feature of production is minimal interference with the winemaking process and manual labor in the vineyard. Fermentation takes place in stainless steel tanks at a controlled temperature. Aging in barrels from Caucasian and French oak lasts 12 months.

Uzunov Winery - a young family winery from the Krasnodar Territory. It is located in the village of Sennoy, between the coast of the Taman Bay and the Akhtanizovsky estuary. This geographical position gives the local terroir individual features. The founder of the winery and the main winemaker is Yaroslav Uzunov, who graduated from the Kuban State Agrarian University and works as a winemaker at the Fanagoria agricultural firm. In addition, Yaroslav is a representative of the fourth generation of winemakers, whose experience was inherited. Yaroslav's wife, Yulia Uzunova, is a process engineer for the Fanagoria wine production. Father - Yuri Ivanovich Uzunov - the ideological inspirer of the family winery and the main winemaker "Fanagoria". Also at this famous production were the grandfather and great-grandmother of Yaroslav Uzunov.
Yaroslav Uzunov began experiments on the production of his first wines in 2008, leasing 2 hectares of vineyards, and in 2016 the farm got the opportunity to plant vines in its own areas. By this time, the winemaker has fully decided on the varietal composition. So, 0.3 hectares of classical varieties were planted in the vineyard - Saperavi, Cabernet Sauvignon, Chardonnay, Aligote and Sauvignon Blanc, as well as the famous autochthonous variety Krasnotop Zolotovsky. No mechanization is used in the vineyard, all operations - from planting vines to picking and sorting berries - are done manually. The winery is equipped to order by the project of the winemaker. For aging, oak barrels from Caucasian oak (Fanagoria) and French oak (Radoux) are used. The winery has a potential capacity of 50,000 bottles of wine per year.
Uzunov wines are improved year after year and have already received a number of diplomas and medals at prestigious wine competitions.
