Tasting Notes
The wine is deep pink with orange highlights.
The taste of wine is balanced, fresh, rich, elegant, slightly sharp, with pleasant dryness, notes of red cherry, nougat, cloves and a long, refreshing finish with hints of vanilla.
The powerful and complex aroma of the wine is filled with notes of red fruits, honey and spices, beautiful oak and floral shades.
The wine goes well with salmon, lamb curry, chicken meat with mushrooms, grilled red mullet with herbs.
Interesting Facts
"Cuvee Prestige Caroline" - an elegant, serious rosé wine that combines tradition and modernity. It is named after the granddaughter of Andre Roux, the owner of the estate in the 30s of the XX century, who planted the first vines of the Tiburen variety in the estate. This cuvée represents the brilliant evolution of estate wines and the cultivation of the noble and demanding Tiburen variety. Vintage wine is harvested from organic vineyards in the early morning hours, carefully sorted and separated from the ridges. After fermentation, the wine is aged in new 300-liter oak barrels for 8 to 10 months. Beautiful already in youth, “Cuvée Prestige Carolín” can be perfectly stored for 8-10 years.
Producer's description
Clos Cibonne - an old estate of the XVII century, towering on a hill between Toulon and Hyeres, surrounded by vineyards and overlooking the harbor of Toulon. The estate received its name from Jean-Baptiste de Sibon, the captain of the Royal Navy Louis XVI and the first owner of the vineyard. After his death in 1797, the property was sold to the Ru family. In the 30s of the XX century, Andre Roux began to grow vines of the Tiburen variety in the vineyard. Since then, both children and grandchildren continue this tradition, and their authentic wines from Tiburen became known throughout the world.
Currently, brother and sister Olivier and Caroline Roux, representing the fifth generation of the family, are working tirelessly on 15 hectares of vineyards with shale and clay soils, which are cultivated in accordance with the principles of organic farming.
