Interesting Facts
"Reve Bleu" VS, Cognac AOC is a noble cognac, in the production of which cognac distillate is used from Uni Blanc grapes grown in the Cognac region. The production of cognac requires grapes with relatively high acidity and low sugar content. Low sugar in grapes means low alcohol in base wines. This allows them to be distilled longer, which is important for obtaining pure alcohol. The high acidity acts as a natural antiseptic, protecting grapes and wines from bacterial spoilage. Good disease resistance is another requirement for the grapes used in cognac. The relatively cool, humid climate of the Cognac region poses a high risk of rot in the vineyards, defects can be exacerbated by distillation. Uni Blanc meets all three requirements. The grapes are harvested relatively early, which ensures low sugar and high acidity. The base wine is double-distilled in small distillation stills. The resulting distillate is aged in oak barrels for at least three years.
Domaines Francis Abecassis covers an area of 240 hectares in the Cognac region and is one of the largest landowners in the appellation. The three estates that make up the Domain - Domaine Le Reviseur in Petit Champagne, Domaine de Dizedon in Grand Champagne and Domaine Leyrat in Fin Bois - are located in favorable climatic zones where the vineyards receive ample sunshine. Each estate has its own distiller, adapted to the characteristics of the drinks produced. There are 21 cellars with 100 vats and 3,000 barrels in the Domains Abecassis estates, which is the equivalent of 3 million bottles. Administrative and commercial services as well as the filling line are located on a separate estate - Domaine de Chez Maillard.
