Interesting Facts

"Valdaya" Mirum - a luxurious wine eponymous farm Valdaya, created from the variety Tempranillo, grown on sand-silicon soils in the region of Ribera del Duero. To create a wine used berries from old vines. In the process of vinification, the grapes destabilize and undergo spontaneous maceration, after which comes the turn of fermentation, which lasts 20 days. Further, the wort is still 28 days macerated in barrels where fermentation took place. The final stage of vinification is aging in new barrels from French (90%) and Hungarian (10%) oak, which is carried out for 15 months.

In 2015, the Waldaya wine Mirum was produced in a volume of 12,000 bottles. According to the Decanter magazine, this wine is considered one of the best wines of Ribera del Duero.

Valdaya is a Spanish winery founded by spouses Elena and Joaquin Gonzales. As winemakers, they invited two young professionals, Martha Ramas and Miguel Fisac, who studied enology at the University of Bordeaux and worked in France at the time. Their first result was the vintage of 2013 - a year that in Spain was rated as not the easiest for winemaking. The concept of winemakers was simple: from each of the nine best plots create nine barrels of wine in order to determine in practice the peculiarity of each vineyard. And despite the fact that after assembly only two cuvees were created, the process of identifying and studying the quality and potential of the terroir was extremely important. Since then, the farm produces two wines: Valdaya and Valdaya Mirum, each of which, differing in character and taste, demonstrates the same high quality.
