Thanks Chapoutier this wine to preserve and increase their dignity. Grapes for Tavel "Beaurevoir" grown on gravel-limestone soils with a mixture of red clay. Harvested on the degree of maturity. Traditional vinification is maceration, which lasts from 24 to 36 hours and is accompanied by a "cupping" (separation of juice from the grapes).
