Interesting Facts
Since the time of the papal court Clement VII and Benedict XIII and the kings of France Louis XIV and François I Tavel was the best among the rosé wines. In the ranking of 1820 it was comparable to the famous wines Kornas and Chateauneuf-du-Pape. Tavel today - it's a wonderful, graceful and elegant wine, far from "traditional" pink wines. Thanks Chapoutier this wine to preserve and increase their dignity. Grapes for Tavel "Beaurevoir" grown on gravel-limestone soils with a mixture of red clay. Harvested on the degree of maturity. Traditional vinification is maceration, which lasts from 24 to 36 hours and is accompanied by a "cupping" (separation of juice from the grapes). Bottling is done in the spring after malolactic fermentation and aging in oak barrels, which allows to pass a decent pink wine evolution.
