The Dalmore Distillery is located in the picturesque mountains of Scotland, on the north shore of the Firth of Cromarty Bay, amidst the rich natural resources: the deep clear Loch Mori Lake and the coastal soils of the Black Isle, which produce magnificent golden barley. Dalmore has been producing exclusively single malt whiskey since 1839. For nearly a century, the distillery was owned by the Mackenzie clan. Decorating each bottle, the head of a deer is taken from the Mackenzie coat of arms. History says that in 1263 the distant ancestor of Mackenzie saved on the hunt of King Alexander III, killing a deer with one arrow. In gratitude, the king granted him the right to represent the head of a deer with twelve branches on the horns on the arms, which means "royal", and the motto "Save the King".
Despite the fact that today the plant has changed owners, the determining influence of the Mackenzie clan on the production of whiskey is evident to this day. Preserved style of whiskey, the recipe for its production and even old equipment. Some distillation cubes installed at the plant date from 1874. Unusual cube construction. Four of them have flat tops, and not the usual "neck of a swan", which makes it possible to make spirits heavier and more characteristic. The other four cubes have unique water exterior cylinders around the "neck", which provide constant cooling of copper and more thorough cleaning of alcohols.

Another feature of the Dalmore plant is the ways of holding the whiskey. There is an old Scottish saying: "The tree makes whiskey." By law, Scotch whiskey should be aged in oak barrels. Dalmore uses two types of barrels - from American and European oak. Each type brings its own flavors, displacing from the whiskey more heavy, undesirable. Used and old barrels of bourbon or sherry, which also add whiskey hints of flavor and taste. When the master distiller of the Dalmore plant believes that whiskey is ripe and ready to spill, he chooses whiskey from both types of barrels and combines them together. Then, he again returns the already mixed whiskey to the barrels for another four months, so that the components calm down, completely unite and agree with each other. As a result, whiskey gets an exceptional balance of flavors: the original fresh fruity is complemented by notes of sweet vanilla and coconut from American bourbon barrels and aromatic spices with shades of dried fruits from European red oak from under sherry.

Starward Whiskey was founded in Melbourne in 2007. Its founder, David Vitale, dreamed of creating an original Australian whiskey that could be presented to the whole world. His dream he fully realized in the line of whiskey "Starward" aged in the "Three Melbourne Years". A feature of this aging is the unique location of the distillery, where the difference in temperature fluctuations per day can reach 12 ° C. It is thanks to this temperature difference that the barrels begin to "work" at full capacity, giving the future whiskey a maximum of taste and aroma.
