Interesting Facts
The wine "Benozzo" is one of the most important products of the Signae factory. "With wine" Benozzo "we wanted to return the world the pleasure of drinking traditional Umbrian wine and restore the millennial territorial identity of the native, more polyphenolic vine, which is the oldest in Italy . "
Grapes for wine making are carefully selected by hand from their own vineyards. Before fermentation, which takes place at a controlled temperature of 20-22 ° C, cryomaking is used using the best technologies of the third millennium and respecting ancient traditions. After the apple-milk fermentation in oak barrels, the wine ripens in steel tanks with the help of a very modern system of micro-oxygenation, partly in oak barrels, and, after bottling, in bottles. The general term of wine aging is 2 years. The storage potential of "Benozzo" is 10-15 years.
Producer's description
Aliara , which produces wine, olive oil, jams and other food products, belongs to the resident of Bastardo Luciano Cesarini. Luciano did not plan to connect his fate with winemaking and was trained in electrical engineering in Bologna. But in the early 2000s, in connection with the crisis in the industry, Luciano, his wife Fiorella and brother Giuseppe abandoned their professions and began a new path associated with wine. They build a winery in Bastardo, in an ecologically clean area surrounded by greenery and preserved medieval castles. Luciano carefully studies winemaking and viticulture, buys land for vineyards and designs a technologically advanced winery, which was named "Signae" . It was under this brand that Aliara's wines became known all over the world. Today, the winery "Signae" is considered to be one of the most technologically advanced in Europe, and the company relentlessly studies technology to improve product quality. The cellar for wine storage is equipped with isolation systems from electromagnetic fields, which prevent early and harmful aging of the wine.
The area of the vineyards of Aliara is 30 hectares. Grapes are grown using exclusively traditional technologies, organic methods, with great respect for the environment. To support the vine, trees and other natural supports are used, as was the case at the time of the Etruscans. Harvest is collected exclusively by hand. One of the main features of the winery is the cultivation of the originally Umbrian grape of the Sagrantino variety, which can not be found in any other region.
