Tasting Notes
The wine is golden yellow.
The taste of wine is dry, energetic, fresh, with an oily texture, mineral tones, notes of fruit, herbs and toast, lively acidity and an attractive long finish with a delicate bitterness.
In a slightly smoky aroma of wine, the tones of stones and lemon are mixed with notes of white flowers, nuances of dried fruits and balsamic.
The wine goes well with white fish and Andulette sausages cooked in white wine, seafood terrines or fish and Conte cheese.
Interesting Facts
"La Grande Chaude" Chardonnay - magnificent Chardonnay of remarkable purity and high class. The wine is made from Chardonnay grapes harvested from old vines. After vinification with natural yeast, the wine was aged in old oak barrels, due to which it retained its energy and freshness, but acquired a beautiful oily texture. The wine is completely natural - from working in the vineyard, which is carried out manually and without chemicals, to bottling without clarification, filtration and the use of sulfur dioxide.
Vintage 2016 is recommended to be opened no earlier than 2021. The bottle should be uncorked several hours before use.
Producer's description
Philippe Chatillon is a master of natural wine, fond of magnetism and homeopathy and creates wine in complete bio-harmony. According to him, vibration of sound is important because it helps balance wines during aging. To harmonize his wines, Philip prefers the sound of harp and singing bowls. Therefore, 2 times a year, he invites his friend playing the harp, and arranges concerts in the cellar for wine. One day they asked Philip if he had ever tasted wine from a barrel before and after a concert. He said that he did it the first time when he started this tradition - and the difference was enormous! As if he tasted different wines.
Before creating his own winery Domaine Philippe Chatillon Philippe worked for 18 years in various wineries in various regions of France. At the end of 2012, Philippe was lucky to acquire a small winery and vineyards in Poligny (Côte du Jura) with autochthonous varieties Savannen and Melon. Organic farming was already practiced in this farm at that time, which was very important for Philip when choosing a winery. In addition, he managed to acquire several tiny limestone vineyards with Pinot Noir and Chardonnay varieties. Today Chatillon creates his wines with love and passion. All that he does in the vineyard and in the winery is exclusively manual labor. He does not use any herbicides, nor synthetic and chemical fertilizers. Philippe holds his wines in barrels in an old seventeenth-century cellar, uses a vertical press of the 19th century and makes combing manually. He creates wine in bio-harmony.
