The harvest in 2010 was held in September - the month in which the warm and sunny days interspersed with windy and rainy. Merlot was harvested in the period from the 10th to the 20th of September. In the same period, Sangiovese finished his maturation due to the cool nights and warm days, allowing the grapes to reach full physiological maturity. As a result, Sangiovese harvested together with a small part of Syrah in the last ten days of September. The crop was very healthy, endowed with intense color and flavor, resolute character, significant varietal characteristics, which gave guarantees high quality wines. Each variety vinified separately. Sangiovese was crushed and fermented with the skins in stainless steel tanks for 10 days. For Merlot and Syrah preferred in the first stage was the maceration, which aims to preserve fruit and notes of soft tannins. Then fermentation was carried out at a maximum temperature of 28 ° C. After completed before winter malolactic fermentation all grades, wine assemble and put in drums (90% - Slavonian oak, 10% - from US) for holding for the next 9 months. The use of American oak barrels were used to complete the aromatic bouquet "Peppoli." Thus, aging in barrels aimed to preserve fruit flavors and soften the tannins. After bottling the wine for some time "matured" bottled in the cellars of the winery.
