For manufacturing Peppoli Chianti Classico taken 3 grapes - Sangiovese, Syrah and Merlot, each vinified separately. Sophisticated production technology includes 2 phases of fermentation: Average natural fermentation and malolactic fermentation, thus achieving a perfect balance of taste and roundness. After the end of fermentation, the wine is blended and aged for 9 months in oak barrels, 10% of which are made from American white oak. This storage technology fills Peppeli sensual aromas of spices and vanilla.
