Rich, full of grace classic Sauvignon Blanc Pouilly-Fume - wine with dazzling taste and aroma from the Loire Valley. Pouilly-Fumé vineyards are located in two hundred kilometers south of Paris, on the east bank of the Loire. Pascal Jolivet owns vineyards in the villages of Tracy, Saint Andel and Forest Lodge and Pouilly-Fumé in the total area of ​​8 hectares. The close proximity of the Loire river creates the perfect climate for growing vines. Pouilly-Fume is a blend consisting of Sauvignon Blanc, collected from three vineyards with different types of soils. 50% of the blended wine is Sauvignon Blanc grown in Forest Lodge on chalky soils, it provides beverage length and full-bodied. 30% Sauvignon Blanc grown in St. Andel on silicon soils. 20% of the grapes from silicon soil village Tracy gives the wine fruity notes and complete the bouquet.
The grapes are harvested by hand. Grape juice naturally fermented without adding yeast cultures, at a controlled temperature. Harvest from each vineyard is fermented separately to the characteristics and individual characteristics of each terroir fully apparent. Lees aging is carried out in stainless steel vats.

The estate specializes in wines from Sancerre and Pouilly-Fume, which are produced in the classic style of the Loire Valley. Vineyards with a total area of about 70 acres are located on steep slopes in the vicinity of Sancerre, on the west bank of the Loire, as well as on the opposite bank in the vicinity of Pouilly-Fumé. The soils of Sancerre contain a lot of limestone, clay and silicon. These are ideal conditions for growing Sauvignon Blanc.
