Wine "Rosso del Soprano" is made from indigenous grape varieties. The main varieties are blended Nerello Maskaleze and Nerello Capucci and varieties Nocera, Tinolino, Achitana, Galatians and Calabrese - subsidiary. Crop harvested in late October. Soft pressing and fermentation produced in steel containers at controlled temperatures. Shutter speed is held in two stages - one year in French oak barrels, and then 8 months in bottles. The annual output of wine "Rosso del Soprano" is 22,000 bottles.
It is believed that the most elegant wine of Sicily produces a small winery Palari. The company was founded in the eighteenth century in the small town of Santo Stefano Briga, in the province of Messina. The main objective of the company was the revival of ancient traditions with modern winemaking techniques. El Salvador Geraci, founder of the winery, did everything possible to make your dream a reality. The vineyard is located on a very steep slope (height above sea level varies from 0 to 450 meters) and a small footprint - only 7 hectares. Harvesting is done manually, with strict selection, so per vine going to no more than 1 kg of grapes.
The first wine company Palar released in 1990, now the volume of production does not exceed 40,000 bottles. At the moment, the winery produces only three wines - "Palari" Faro, "Rosso Del Soprano" and "Santa.Ne '".
