Domain Herve Azo - a small winery, founded in the late 1970s Herve Azo - a specialist in Public Relations from Paris, fell madly in love grapes and wines of Chablis. It all started with the vine and the acquisition of a small area. To date, the area of vineyards Domain occupy about 15 acres, 9 of which are located in the exclusive area of Premier Cru on the slopes around the village of Milly. The harvest in the vineyards produced mechanically, even frighteningly steep slope Vau de Vey, where a few years ago even overturned tractors economy. Organic fertilizers are used whenever possible. Domain wines are fermented and kept exclusively in stainless steel tanks to preserve the classic mineral qualities of Chardonnay in Chablis. Herve Azo strenuously objected to the use of wood. In 2004, Domaine Herve Azo acquired a prestigious winery Brocard. Real Estate Domain has been preserved intact, original style economy remained unchanged. Innovations have touched the care of the vineyards that have been fully converted to organic methods.
