And no wonder, because it is created from the highest quality grapes harvested from specially selected terroirs, each of which differs from each other soil composition. Hoping to create the perfect wine, Scott and Chris Watts has long experimented with oak before picked up for each terroir your grade. In the end, thanks to a wide combination of American and French oak species of varying degrees of roasting and drying, they got rich, complex and well-balanced wine "Reserve" Shiraz, where oak merely adds to, rather than scores fruity notes of grapes and wine tannic structure.
Harvest each plot is fermented and aged separately, and extracts used for a certain percentage of new oak barrels and annuals from France, USA and Australia. Vintage 2011 was kept in two stages - 21 months in new barrels and 1 year old. In the final assemblage "Reserve" Shiraz includes only the best barrels that are carefully selected oenologist Fox Creek. Wine storage capacity - up to 2024.
History of Fox Creek began from the moment when Jim and Helen Watts in 1984 purchased 32 acres of land in Sun Valley McLaren. Despite the fact that many tried to dissuade them from ideas to break the vineyards here, they went after his dream and thanks to the hard work and professional approach created a wonderful wine, which today are the owners of gold medals at many international competitions.
The mild climate of the Valley McLaren is very similar to the Mediterranean coast. Due to the proximity of the ocean is never cold, and almost the entire year (except the winter months) is warm and dry weather, which protects the vines from disease. Among a lot of attention is given to methods of biodynamics, particularly for pest control are used, some species of predatory insects and birds to attract around which the vines are planted trees specifically.
