In a pleasant, fruity, round, fresh taste of juicy cherries are well-balanced tone with hints of herbs, chocolate and salt, smooth texture and integrated tannins, long finish with notes of vanilla.
The aroma is dominated by wine tones candied cherries, blackberries and plums, which blend harmoniously with hints of underbrush, pepper, spices and marine notes.
The wine goes well with meat dishes, especially lamb, stuffed tomatoes, cheeses, pates, poultry, Mediterranean cuisine.
Gaby domain is passed from generation to generation, family owned Gaby, but little of him who knew, because all grown in vineyards Domain harvest was sold to local producers. That all changed in the early 80-ies of XX century, when came to the domain management Gerard Gaby. He took the courageous decision to produce wine under its own brand. Gerard first vintage released in 1985, and in subsequent years Domain Gabi has gone from novice to a worthy member in the lists of the best estates in the Languedoc-Roussillon.
Significant changes have undergone vineyards economy expanded from five to 40 acres. The main sites are located in the village of Calce, although Gabi also acquired vineyards in the region is popular nowadays Fenouilledes. Soils are mostly Cretaceous (calcaire), hence the name Calce, but there are slate. In the vineyards economy prevails variety Grenache, with some vines date from 1947, and twenty years Syrah vines. One of the attractions of the economy are 125-year-old vines Carignano. The vineyards are cultivated using only biodynamic methods. Originally produced Domain Gaby wines were quite tannic, but eventually Gerard moved on to more balanced and elegant style, greatly improving the taste of wine.
