Wine Cotes du Rhone Villages "Bois des Moines" is made from a blend of grape varieties Mourvedre, Grenache and Syrah grown in the vineyard Bois de Moine. The site is located on a hill in a pine forest, which perfectly protects the vineyard from the wind, rain and hurricanes. Soil - gravelly, retains heat well and has excellent drainage. Climatic conditions and soil particular allow the grapes to develop harmoniously. The grapes are harvested by hand and carefully sorted. Alcoholic fermentation is slow in steel tanks. This allows you to get the most flavors. To complete the extraction of tannins and color temperature rose to 30 ° C. Then the wine is decanted. After malolactic fermentation the wine is poured into oak barrels and aged 12 months. After 1 month aged in concrete tanks, exposed to light filtration and bottled.
