Unusual climatic conditions in 2003 were characterized as cold in winter and one of the most hot and dry in recent years, in the spring and summer. High temperatures in the spring affected the good germination of all sorts, even a little ahead of schedule, as well as to create optimal conditions for flowering and fruit set. The summer heat has allowed the berries ripen as early as mid-August, early varieties showed very high levels of sugar. However, due to lack of water, especially where it was impossible to have recourse to irrigation, there was a slight decrease in yield. During harvest weather was stable, allowing it to select the optimum time. In addition, the temperature difference between day and night in August gave the grapes to fully complete the ripening berries which provided excellent color and good texture.

Soil rich in Pliocene marine fossils with some patches of clay. Harvested grapes placed on cooling conveyors to ensure the berries at low temperature molding. Fermentation occurs each class separately in order to preserve and enhance the aroma, must remain in contact with the skin for 8 hours at a temperature of 10 ° C. After that, must be placed in the new 225-liter French oak barrels (Allier, Tronkays) for the 15-day fermentation.
