"Cervaro della Sala" - one of the best wines in the line Antinori. It received its name from Cervaro nobles who were the owners of Castello della Sala in the XIV century. The first harvest "Cervaro Della Sala" was produced in 1985 and in 1987 was introduced to the market. This wine has bright character, style and has won numerous awards and has won several major awards for its consistent quality.
Unusual climatic conditions in 2003 were characterized as cold in winter and one of the most hot and dry in recent years, in the spring and summer. High temperatures in the spring affected the good germination of all sorts, even a little ahead of schedule, as well as to create optimal conditions for flowering and fruit set. The summer heat has allowed the berries ripen as early as mid-August, early varieties showed very high levels of sugar. However, due to lack of water, especially where it was impossible to have recourse to irrigation, there was a slight decrease in yield. During harvest weather was stable, allowing it to select the optimum time. In addition, the temperature difference between day and night in August gave the grapes to fully complete the ripening berries which provided excellent color and good texture.
Grechetto and Chardonnay grapes for "Della Sala Cervaro" grown for 15-20-year-old vineyards located around the Castello della Sala, at an altitude of between 200 and 400 meters above sea level. Soil rich in Pliocene marine fossils with some patches of clay. Harvested grapes placed on cooling conveyors to ensure the berries at low temperature molding. Fermentation occurs each class separately in order to preserve and enhance the aroma, must remain in contact with the skin for 8 hours at a temperature of 10 ° C. After that, must be placed in the new 225-liter French oak barrels (Allier, Tronkays) for the 15-day fermentation. The wine remains on the lees in barrels for 5 months, completing malolactic fermentation. After the end of fermentation, the wine is blended and aged for 10 months in bottles in the historic cellars of Castello della Sala.
