Tasting Notes
The wine is a beautiful transparent ruby color.
The rich, velvety taste of the wine is filled with quite intense, but thin and smooth tannins. The finish is persistent, harmonious and complex, it solo notes of black currant and sweet spices.
The pleasant aroma of the wine is based on the elegant tones of cherry, blackberry, peony and lilac flowers, complemented by hints of licorice, white pepper, undergrowth and tobacco.
Wine matches perfectly with the rabbit, pheasant, wild boar and duck.

Catherine et Claude Marechal, Pommard "La Chaniere" AOC is a deep, structured wine that has the potential for aging from 7 to 15 years depending on the crop. Pinot Noir grapes were grown on clay-limestone soil plot Pommard "La Chaniere" area of only 1 hectare. Vines aged about 35 years gave not wild, but seductive and restrained wine, which received additional complexity after aging in oak barrels (10-25% new) throughout the year.

Claude Marischal is a winemaker that most people outside France have not even heard of. It began operations in 1981 and still uses leased vineyards throughout the Côte de Beaune region. Then he met with the famous winemaker, Henri Jayer, who became a source of knowledge and inspiration. His idea is to create a "win de plaisir" - wines that are more focused on simple pleasure than on complex intellectual delights.
In Domaine Catherine et Claude Marechal work with three grape varieties - Pinot Noir, Chardonnay and Aligote. More than 20 years ago, chemical fertilizers were abandoned here in order to preserve the viability of the soil. Winemaking is natural and is carried out without human intervention, as far as possible. The barrels are updated every year, but their share remains very low in order to preserve the dominance of the fruit in the bouquet. It must be emphasized that wines do not have a clear recipe: there is a general trend, and methods may vary from year to year to meet the conditions of vintage. Domaine Catherine et Claude Marechal is without a doubt one of the most carefully guarded secrets in Burgundy.
