This wine is produced every year, but only in the seasons when the crops were deemed to be committed. Being a very late ripening variety, Sangiovese is going in the first half of October. Fermentation and maceration last from three to four weeks, after which the wine matures in small French oak barrels for 31 months and then 30 months in bottles. The wine has a very long storage potential.
