Eloise - is the name of Bertrand Ambroise granddaughter, born in 2007. Her first baby cry rang in the ears music loving grandfather and he inspired and elated, began to create a wine in her honor.
Grapes for wine "Lettret d'Eloiz" ("Letter Heloise") comes from young vines of Chardonnay, which are grown on clay soils in Premeaux-Prissey. The wine is fermented in one-, two- and three-year oak barrels, where it is then aged for 10 months. Wine is not penalized and only slightly filtered before bottling.
