The name "Serra della Contessa" was first mentioned in 1474 in the notarial document written in Latin. Now it is one of the best wines of Etna DOC, which is produced from a mix of the two most common in the area of the volcano grapes - Nerello Maskaleze and Nerello Capucci. The vineyards are located on the eastern slope of the mountain community Viagrande at an altitude of 500 meters above sea level. The youngest vines are aged about 80 years, but until now partially preserved and fruit plants that were planted before the phylloxera epidemic, which means they are already more than a century. Collected in late September berries are a long period of fermentation and maceration of the skin cold in large wooden barrels volume 5200 liters. At the end of malolactic fermentation, the wine is placed for a year in 225-liter oak barriques for further maturation. After bottling the drink still 12-15 months aged in the cellars and then goes on sale. With proper storage of wine "Serra della Contessa" continues its development in bottles and over the years becomes more mature and dense.
