Inzolia grapes grown on 12-year-old vines in areas of south-eastern exposure. For Chardonnay were selected vineyards with eastern exposure, the average age of the vines is 8-10 years. Stocking density - 5,000 vines per hectare. Harvested by hand: Chardonnay shoot in August, Inzolia during the first week of September. Winery berries tested for cold maceration of the skins for 12 hours at 8 ° C, air pressing, cold decantation and, finally, at the fermentation temperature of 18-20 ° C in stainless steel tanks.
