For the production of wine "Brokel" Cabernet Sauvignon grapes used Cabernet Sauvignon, which is perfectly caught on the high-desert areas of the Andes, in the region of Mendoza. Rocky and sandy soils, prevailing in the area, give the grapes and wine from a good structure, firm tannins and crisp mineral taste. Sudden changes in daily temperatures promotes a long, slow ripening period, providing a balance of sugar and acidity in the grapes. Dry air hillsides favorably reflected on the vines, has saved them from diseases. Ripened grapes are harvested by hand and delivered to the winery in small plastic boxes, to avoid damage to the berries. Winery berries are sorted and undergo a process of maceration for 20-25 days. Then the wine is aged for 15 months in new French and American oak barrels. Because of this, wine charms ultra powerful bouquet of ripe berries and hints of toasted oak, leaving a long and smooth finish.
Vineyards of Trapiche grow in areas with low rainfall, so the engineers had created a unique irrigation system that uses natural melt water from the mountains without disrupting the balance of nature. Furthermore, according to company policy Trapiche, viticulturists use only biodynamic methods of work with the vine, completely eliminate the use of chemical fertilizers and other chemicals that cause irreparable damage to the ecology area and, of course, deteriorating natural characteristics of wines.
