In the XVII century, the French missionary father Tertre traveled to the islands of the Caribbean Sea. Returning, he wrote a book about what he had seen. Rum "Rancado" Black is made from sugar cane juice. It is heated to a liquid syrup. In the resulting mass, molasses are separated. Then the juice is left to ferment in copper vats. The next stage is distillation. Black rum is kept in fired oak barrels. After that, it is distilled two more times. Rum gets a rich dark brown or brownish-amber color. On average, the dark rum is aged for at least 3 years, then bottled without filtering.
