It was originally produced only from apples, but now, depending on the geographical area of production, there are three types of Calvados: "Calvados" pears and apples from Normandy; "Calvados Pays d'Auge" apples region Pays d'Auge; "Calvados Domfrontais" apples and pears area Domfrontais, the volume of which must be at least 30%.
Lemorton farm located in the south Domfrontais Normandy, which is considered the best place for growing pears. "Pommeau de Normandie" is born from the mixing of Calvados and fresh unfermented apple juice in a ratio of 1: 4. After the double distillation, Calvados is aged for at least 2 years in oak barrels. On the farm Didier Lemortona drink "Pomme de Normandie" is stored in barrels, with an average age of 30 years, more than 18 months.
