Chardonnay grapes used for the production of wine makers wine Batar-Montrachet, grows by 4 areas of the vineyard of the same name. The soils are composed of clay and limestone that is the best suited for growing Chardonnay. Agronomists economy since 1990, strictly adhere to biodynamic cultivation methods, so collect only a healthy and high-quality crop. Organic fertilizers are essential elements to saturate the soil with nutrients that contribute to its improvement and preservation of the environment. Lunar calendar, the composition of soil and water have a huge impact on the growth and development of the vine, vine-growers and strictly follow the rules, so as not to disturb the balance of nature. Fully ripened crop is harvested by hand, carefully sorted and gently pressed. Thereafter, the juice is subjected during the days of aeration that allows to saturate it with oxygen. Fermentation of wine is carried out in oak barrels, 25% of which are new. Wine kept in the same barrels for 12 months, and then another 6 months - in stainless steel tanks. Before bottling, if necessary, apply a light filtration.
The founder of the winery Domaine Leflaive is Claude Leflaive, which in 1717 acquired the vineyards in a small area of Puligny-Montrachet. Inherited the family estate passed to Joseph Leflaive (1870-1953), who, being an engineer by training, took part in the creation of the first French submarine. But, not having achieved great success in this area, in 1905, Joseph returned to his hometown, his father took the farm and bought 25 hectares of vineyards in the area at very low cost, since most of them were affected by the epidemic of phylloxera. Few believed in the success of the case, but Joseph Leflaive knew that the vineyards are of great value, so did everything for their development. He achieved the result, and since 1920 Domaine Leflaive began to produce wine under its own brand. Over time, they have gained a reputation as the best wines of Burgundy, conquered the hearts of connoisseurs of excellent quality and unsurpassed taste.
