Wine Pascal Jolivet, Sancerre Blanc, 2014
The wine is pale yellow with sparkling green shades.
The taste of wine, as well as fragrance has an attractive freshness and purity. Very dry and elegant drink is particularly youth, subtle acidity and content of residual sugar.
Aromatic bouquet of wine is very fresh and clean, with faint notes of wildflowers and grasses.
Wine is the perfect complement to fish dishes, shellfish, goat cheese.
Sancerre Blanc wine is a blend of Sauvignon Blanc grapes harvested from three vineyards of Sancerre with different types of soils:
- Le Kallote vineyard with a very chalky soils, 50% Sauvignon Blanc in the blend;
- Le Terre Blanche vineyard with clay-calcareous soils, broken on the highest hill area, 30% Sauvignon Blanc blended;
- Vineyard Silex has an eastern exposure and lime-silica soil, 20% Sauvignon Blanc blend.
The vineyards are surrounded by forest on the one hand, on the other hand their skirts the river Loire, all this creates a very mild climate, ideal for growing vines.
Pascal Jolivet philosophy is to use the minimalist style of winemaking. Letting nature take its course, Jolivet minimally interferes with the process of vinification. The grapes are harvested by hand and gently pressed. The wort is fermented naturally in the natural yeast cultures at a controlled temperature. The highlight of this drink is that the grapes from each vineyard is fermented separately. Thanks to this characteristics and individual characteristics of each terroir are fully manifested. Lees aging is carried out in steel tanks, after which the final blend is composed of three Sauvignon Blanc.
Wine House Pascal Jolivet was founded in 1987. Vineyards with a total area of about 70 acres spread on both banks of the river Loire (Sancerre on the west coast, Pouilly-Fumé and the east). Sancerre soil contain many limestone, clay and silica. It is ideal for growing Sauvignon Blanc. Pascal Jolivet adheres to the idea that the ideal wine creates very nature, therefore, intervention in natural processes of vinification is minimized.
