Parusso, Metodo Classico Brut - an elegant sparkling wine made from Nebbiolo grapes. Assembled in mid-September, the grapes are left to rest at a certain temperature and humidity to achieve the best degree of maturation. Further fermentation takes place under the classical technology for white wines with the best 40% of the wort, called "mosto fiore". Fermentation is carried out in part in steel tanks and partly - in oak barrels. Periodic batonnazh adds wine roundness and structure. Before Christmas in the wort to add a special yeast, then leave it for 30-40 days at a controlled temperature and humidity. This process activates the secondary fermentation of wine after bottling. Maturing wine lasts 30-36 months. At this time, every 3-4 months held disgorging (operation to extract the yeast sediment from the bottle).
