The taste of wine is fresh, intense, soft, fruity, with good acidity and very pleasant aftertaste, leaving intense sensations of fruit and freshness.
The aroma of wine is very intense, it is dominated by shades of mature white fruit, especially clearly felt shades of pear and apple.

Xarel.lo, Macabeu and Parellada are the traditional Spanish varieties used for the production of sparkling wine Cava. Pares Balta winery of these varieties produced excellent fragrant still wine "Blanc de Pacs". A special aroma and flavor intensity gives the variety Xarel.lo, grown in the vineyard Finca Pares Balta at an altitude of 254 meters above sea level. Macabeu and Parellada collected from sites Finca Cal Miret (315 m) and Finca El Subal (616 m). All the vineyards are processed using organic farming methods. Age of vines varies from 20 to 70 years. Harvested by hand in September. Fermentation occurs at a temperature of 16 C in stainless steel tanks for 2 weeks.
Pares Balta first vineyards in the region of Penedes were planted at the end of the XVIII century - in 1790. However, since then much has changed, and the history of today's economy Pares Balta can lead since 1978, when its owner was Joan Kazin Hill. Hill, who was born in 1917 in a family of wine growers, since seven years helping his father to take care of the vineyards. Thanks to his efforts and hard work, Pares Balta farm turned into a huge model farm. To this were added two estates - "La Torreta" and "Els Pujols". Now the family farm Pares Balta owns 5 the surrounding estates. The vineyards are located on this vast territory, and in the mountains Penedès, planted at different altitudes (from 150 to 750 meters above sea level), in a different microclimate in different soils.
This policy allows you to receive a wide range of wines with individual characteristics. The farm has its own flock of sheep, which makes it possible to obtain organic fertilizer to the soil, and hives to maintain pollination. The close proximity of the Mediterranean Sea also affects the quality of the grapes for the better. Since 2000, the management was taken over by grandchildren Joan Hill, who brought the company new and fresh ideas, while expressing respect for its traditions and protecting the rich heritage they inherited from their ancestors winemakers. Pares Balta today produces a wide range of quality wines, which have been recognized at national and international levels.
