Wine Domaine Jean Defaix, Chablis Premier Cru "Les Lys" created from grapes of Chardonnay, 55-year-old vines grown on clay-chalk soils appellasona Chablis. This wine has an exquisite fruity taste with pronounced notes of minerals and classic character of Chablis. Vinification in stainless steel tanks and lees aging ("Les Lys") allow you to save a sensual aroma and unique taste of grapes, giving its future guilt. From harvest to bottling wine making process is strictly controlled, ensuring a great result and good quality Chablis Premiers Crus "Le Lee". The wine has an excellent ability to develop and for the next 15 years, not only retain its flavor, but also to increase its range and wealth.
Continuing the 150-year-old family tradition of two winemaker - Daniel and his father in law Dump Jean DeFeo united in a common domain Daniel Dampt & Fils. The farm has 30 hectares of vineyards, of which 16 hectares are given for future Chablis and 14 - under the Chablis Premier Cru (mainly Vayon, Furshame, Côte de Lesha Le Lee). The winery is equipped with stainless steel tanks. Purchase of new equipment allowed farms to increase production, so the company annually produces about 150,000 bottles. Passion for winemaking was passed and the children of the current leaders - Vincent and Sebastian Dump work together with parents, and after obtaining practical skills and comprehension of the secrets of winemaking in New Zealand and Australia, in 2008, they decided to found their own domain, thereby deciding to expand the range of wines available family production.
