"Cum Laude" - the new wine of the highest category "Super Tuscan" from Banfi. "Cum Laude" in Latin means "with distinction." Wine is made of four red grape varieties, which were taken over 25 years of research. First wine "Cum Laude" was made in 1999. It is a charming red wine, suitable for complex Gastronomy and informal occasions. Harvest for the production of this wine begins in September. Then all four grape varieties are vinified separately. Maceration occurs at sufficiently low (14 ° C) temperature for 2 days, the fermentation lasts more than a week at high temperatures in steel tanks and oak. Malolactic fermentation and aging of wine for 14 months takes place in French oak barrels and then another six months in bottles. Wine storage capacity is 8-12 years.
