There is another version of the origin of the name of wine. Previously, many centuries ago in these parts was a small settlement, the owners of which had a tradition to give blood the old priest, who retired from their homes, that would be easy to grow old. Among the locals houses for saints called "convento", which means "monastery".
Sauvignon Blanc for "Con Vento" landed in the south and south-west of the region, at an altitude of 100 meters above sea level. Planting density is 5,500 vines per hectare. The crop was harvested in September. Grapes underwent a 24-hour kriomatseratsii on the skin (dry ice) and a gentle pressing to extract the quintessence of the best qualities of the variety. Fermentation was carried out in stainless steel vats at a controlled temperature of 16 ° C. First wine yeast extract with constant agitation lasted for six weeks, followed by six months in stainless steel tanks.
Castello del Terrichchio in the production of their wines with a noble but difficult goal: the production of "Supertuscan" quality wines in limited quantities. That restriction yields per vine when removed only about 900 grams of grapes, allows to create rich economy and concentrated wine with a high content of polyphenols, well-structured and capable of long aging.
