Champagne has a fairly dense, rich, creamy taste with a well-structured components, juicy and lively acidity. In the aftertaste noticeable shades of orange and caramelized pineapple, dates and dried apricots, passing in honey tones.
Champagne has an incredibly rich and fresh aroma, which initially perceptible notes of tropical fruit (passion fruit, mango), flowers and light spicy shades. Then, slightly warmed wine shows notes of roasted nuts, butter brioche and lemon flowers.
Champagne goes well with delicate and light meals modern innovative cuisine, such as plaice fillet with onion cream sauce and fennel, grapefruit or mango, galantine of chicken or meat cancer. Also, a good mix of wine will be veal with basil or rabbit stew with thyme. This is an excellent, elegant aperitif and an excellent addition to hard and blue cheeses.
