"Castello di Brolio Vin Santo" - this wine, true to the traditions in the method of production, and in the expression of the terroir with one of the "historic" grape region - Malvasia del Chianti.
Grapes intended for Castello di Brolio Vin Santo del, remove vines from late in the harvest, when the sugar content shows a fairly high level. Collected into bundles of twisted bunches are arranged vertically and are dried for about four months. The juice obtained by pressing and slow fermentation of the past are placed for aging in 225-liter oak barrels where the wine matures for about four years. "Castello di Brolio Vin Santo 2004" was bottled in February 2004. This wine is produced every year and in limited quantities. Volume of production of the vintage of 2004 was 13,000 bottles.
