Vintage wines to create "Beronia" Viura collected from the 23rd to 26th of September. Vine varieties Viura are grown on clay-chalk soils that give the grapes a special delicacy, color, tenderness and softness. Harvest runs cold maceration in contact with the skin for at least 16 hours, which makes it possible to extract the maximum varietal aromas all. Next, the must is moved into the steel container, where it settles for 48 hours at 10ºC, then the fermentation is performed. In early November, the wine is sent to the shutter speed, which takes about a year.

Gonzalez Byass company was founded in 1835 by Manuel Gonzalez and Robert Biassom in Jerez de la Frontera, where it was launched production of great sherries. Thanks to the excellent quality of the wine business, the company immediately went up the hill, so after a short time of production Gonzalez Biass already knew, not only in Spain but also in England, France and other European countries. In 1862, the company even visited the cellar Queen Isabella II, thus expressing their respect for the skill of winemakers.
