Wine "Mapu Reserva" Cabernet Sauvignon is made from Cabernet Sauvignon grapes from the best vineyards of the Central Valley of Chile. Weather in 2012 contributed to the proper growth and maturation of the grapes and something reminded vintage 2009. March was one of the warmest in the last 30 years, summers are dry and hot, which provided the blame rich aroma and taste of generosity.
In the production of wine after a light pressing and fermentation of the grapes was macerated in which manifested the characteristic aroma and taste. The alcoholic fermentation takes place at a controlled temperature in stainless steel vats. Regular tasting each vat determines the length of maceration period, during which the wine acquires a beautiful color and reaches a balanced tannic structure. At the final stage, the malolactic fermentation, in which the flavor of the wine becomes more flexible. The wines are aged in barrels for 6 to 8 months. Then the wine is bottled quickly, while maintaining its freshness and flavor.
In September 1997, the company Philippe de Rothschild SA, through its subsidiary Baron Phillippe de Rothschild Maipo Chile, began production of two Chilean varietals: Cabernet Sauvignon and Chardonnay. The range of wines was supplemented next year with two new wines: Merlot and Sauvignon Blanc. In the future, the winery has developed, increasing volumes and expanding production. Currently, the production of wine used for about 30% of its own grapes, and the rest is purchased from winegrowers with whom the company has entered into an exclusive agreement. Entirely from grapes from its own vineyards farms produced wine line "Escudo Rojo", a more simple, such as "Mapu" and "Mapu Reserva", - purchased from other farms.
