The grapes for the production of Aventino Rosado is assembled by hand at the time of optimum maturity in the period from mid-September to mid-October. Preliminary insistence on pulp within 24 hours. Fermentation occurs in cement vats of 15 tons at a temperature of 26-32 degrees for 3 weeks. Wine kept in steel tanks for 3 months.
In the Ribera del Duero, in the east valley Duero, is a small farm Santa Ana. Here grow Tempranillo vineyards that belong to the oldest vineyards in the region. This is where the grapes are grown, from which the popular wine Aventino.
In 2003, the Danish wine producer David Tofterup (David Tofterup) and Juan Jesus Ayuzo, found this place very interesting, created a project Aventino.
